In a town studded with flashy five star hotels, the Oasis Beach Hotel is refreshingly quirky. Located on the hotel’s first floor, Singapura really is a happy place. Its busy tables are haphazardly arranged around such an astonishing clutter of bright Asian masks, bells, dragons, tassels, trees and seafood markets that visitors will gorge on the spectacle before they’ve even taken a bite.
Singapura’s menu isn’t risky, but there’s a persuasive smorgasbord of southeast Asian dishes with an excellent fresh fish market. Expect service to be far from flawless, but delivered with such apologetic smiles that the worst of grievances will be quickly forgotten. Out of a winning selection of starters and mains, the kung pao prawns rampages the taste buds with an army of ginger, peanuts, dried chilli, spring onions and pak choi, supporting the most delightfully fresh prawns.
For something less hyperactive, the chicken green curry is fragrant and creamy and stocked with super succulent chicken pieces. Come dessert, order the sweet coconut soup – underneath an icy tower, you’ll find nubile slivers of coconut flesh and more sensible chunks of taro swimming in a velvety coconut broth. For those who like their meals a little on the entertaining side, Singapura takes the cake.
