It may take what seems like a five-mile walk, an elevator ride and a few twists and turns to get to Fusion from the main entrance of Le Royal Meridien, but the effort is worth it – even if your wallet will be much lighter by the end of the evening. A cavernous restaurant with high ceilings and stylish, clinical decor, Fusion has been criticised in the past for its lack of personal touch. Whatever concerns there were seem to have been ironed out, but they’ve now gone towards the other extreme, offering over-attentive staff by the bucket load.
Thankfully, the Thai, Malay and Indonesian food here is good, and the mixed appetiser platter is an excellent place to start, offering fish fingers (not the English variety), fried shrimp cakes, spring rolls and chicken in sesame seeds, which whet the appetite nicely. The only minus is the indistinct nature of the spring rolls, which need a dose of sweet chilli sauce to lift them from obscurity. A main course of stir-fried chicken with cashew nuts and spring onions has an excellent consistency and proves a big hit when served with jasmine rice.
A similar treat, although not on the same level, are the king prawns with peppers, ginger and chilli, although the dish is a bit light on the crustaceans. Seating is available inside or on the expansive picturesque balcony, yet you have to ask yourself again whether you’re willing to pay high prices for food that’s good, but not always excellent.
